Our oil mill
It is characterised by the use of very low volumes of mixing water at low temperatures.
Thanks to its compactness and modularity, no masonry, plumbing or electrical work is required for installation.
Our olives, harvested at the right level of ripeness, are delicately washed with pure spring water to eliminate every trace of soil and impurities. They are then carefully dried and subjected to grinding…….. This process, which respects the rhythms of nature, allows us to obtain a homogeneous paste, rich in authentic aromas and flavors, ready to give life to our prized extra virgin olive oil."
Through a delicate centrifugation process, the green gold is extracted from the olive paste and carefully separated from the other components. The decanter, a precision machine, allows us to obtain a clear and fragrant oil, extracted at a controlled temperature of about 22°C to best preserve its organoleptic characteristics. In this way, we obtain an extra virgin olive oil of the highest quality, ready to delight the palate.
After extraction, the oil is delicately transferred to a decanting container, where it rests for a few days. This resting period allows the last impurities to settle to the bottom, thus ensuring the maximum clarity and purity of our oil. Subsequently, the oil is carefully decanted and bottled in dark glass bottles, which protect it from light and heat, to best preserve its organoleptic characteristics. Once sealed, the bottles are ready to be enjoyed."
