In the heart of a hilly landscape, between 300 and 700 meters above sea level, our 3500 Taggiasca olive trees extend, witnesses of a centuries-old history. Our production of organic extra virgin olive oil is a tribute to this land and its fruits, an authentic expression of a unique terroir.
A Journey Through the Altitudes, a Journey Through Time
Our harvest, strictly manual, is a ritual that is repeated every year, following the rhythm of nature. It begins at the end of October, at 300 meters, where green olives predominate, a prelude to an oil with an intense fruitiness and herbaceous scents. In November, rising to 500 meters, black olives become more numerous, giving the oil a more complex aromatic profile, with notes of almond and spices. Finally, in December and January, we reach 700 meters, where thousand-year-old olive trees offer us ripe black olives, for a velvety and enveloping oil, with hints of dried fruit and ripe olives.

Our organic cultivation is a concrete commitment to safeguarding the environment and protecting biodiversity. We do not use pesticides or chemical fertilizers, preferring sustainable agricultural practices that respect the ecosystem. The manual harvesting of the olives, their immediate pressing and the attention in every phase of the production process guarantee an extra virgin olive oil of the highest quality, a genuine product rich in beneficial properties.
